Converting Bellini recipes to other machines

Bellini recipe instruction Thermomix conversion
Cook on ST temperature Use the Varoma setting
Use stirring blade Use reverse function
Speed Decrease chopping speed by 1 (e.g. If Bellini recipe says speed 5, use speed 4 in your Thermomix). But for speed 1 in Bellini, use speed 1 in your Thermomix.
Kneading dough: Starts at Speed 6 for 10-20 sec, then drops to a lower speed Use knead function

n.b. the following additional recommendations for ThermoBlends are taken from user comments on Facebook groups  – if you haven’t experienced these problems with your machine, then you probably don’t need to follow them.

  • Avoid cooking thick mixtures (e.g. risottos) on Speed 1 to avoid stressing the motor
  • If your jug burns when cooking on 100C temps, then reduce temp in the recipe to 90C and extend the cooking time.
